Soper Hired As New Extension Office Program Director
The University of Missouri Extension hired Judith Soper as the County Program Director for the Scotland County Office.
Soper replaces Dr. Dan Remley, who resigned in 2002 to accept a similar job in Ohio. Darla Campbell, the Schuyler County CPD, has been splitting time between the Schuyler and Scotland County offices while the Scotland County job was being filled. Campbell will continue to work in Scotland County for a time to help Soper adjust to her new position.
Soper is a registered dietician, who received a master’s in education in 1986 from Central Missouri State University and a bachelor’s in food science and nutrition from Colorado State University in 1963. She is a member of the American Dietetic Association and the Society for Nutrition Education.
She is employed with Extension as a Nutrition and Health Education Specialist. She also will work with the FNEP, which includes the Food Stamp Nutrition Education Program and the Expanded Food and Nutrition Education Program.
During the past eight years, she worked as a nutrition educator and program director for WIC clinics in Missouri and Nebraska. While in Nebraska, she served on a statewide nutrition education task force. Soper was an adjunct faculty member at Central Missouri State University and Northwest Community College, and has taught secondary family and consumer sciences.
In addition to overseeing the day to day operation of the Scotland County Extension office, she will provide her service to Extension offices in several surrounding counties, including Clark, Knox, Schuyler, Putnam and Adair.
